120g chocolate negro 70% fundido
240 g harina
60g cacao en polvo
12 huevos a temperatura ambiente
300g azúcar
3 cucharaditas polvo hornear
1/2 cucharadita sal

Lately, tension at work is feelable and there is a very sad mood. So I finally decided to take something sweet to take to the office. From my experience, sweet stuff ALWAYS make a happier day to norwegians.

This recipe gives for an oven tray, 30 x 36 cm (with a 3 cm thickness once baked)
240g unsalted butter, room temprature
120g melted 70% chocolate
240g flour
60g powder cocoa
12 eggs, room temperature
300g sugar
3 teaspoons baking powder
1/2 teaspoon salt

Preparation: Melt the chocolate bain marie; Mix in another container the flour, cocoa powder, baking powder and salt; Separate yolks from whites; Beat the egg whites into form firm peaks.

Get the biggest bowl you have and add the melted chocolate and the butter, whisk them for about one minute. Then add the yolks one by one without stopping to whisk the mix.

Once you are done, add the sugar to the whites you beated earlier into getting a shinny result. Then add the white mix to the melted chocolate and butter, like about four tablespoons per time. Incorporate well by hand. It should have a very spongy and semiliquid texture.

Preheat the oven 180ºC, with fan.

Finally sieve the dry mix (flour, cocoa powder, baking powder and salt) to the big container, also bit by bit and incorporate with a big spoon. Once is kinda mixed, whisk it a little untill all is incorporated. You shall still have a spongy mix but more solid now.

Pour the mix in the baking tray with a parchment paper and bake for 30 minutes. Then lower temperature to 150ºC and bake 15 minutes more. You will get something between brownie and cake. Smiley faces are granted!

This enlightened me, I shall experiment with other veggies to find out. It's like a pancake, semi-hard and semi-flexible, it goes well to spread smething on them, have as a side or even to have something between them (like making a sandwich).

Ingredients, for 4 toasts of the diameter of a fist more or less
1 sweet potato
1/2 shallot, or onion
1 egg, beaten
1/2 teaspoon of salt

Preheat the oven 200ºC (with fan, top and bottom heat). Peal the sweet potato and shread it with the big side of the cheese grater. Mix the onion with the egg and the salt and add to the sweet potato. Mix well, you will get a mix that won't combine all the sweet potato but it does slightly keeps the shape if you compact it in a smaller shape. Set baking paper on top of the oven tray and make circular shapes with about 2 heaped tablespoons on the mix, press and shape it. Thickness is up to you, it can be somewhere between 1 cm and 1,5 cm - it will shrink while baking.

Bake at 175ºC for 15-20 minutes, until golden and with the edges slightly toasted. Keepin the fridge in a hermetic container for about 3 days.

How different is the taste of minced meat when you do it yourself! If you have a blender or a food processor, I recommend you to stop buying already meanced meat and start doing this with the cut of meat you like.

Just cut the meat in chunks. add it to the blender in approx 300g max and work it, you may need to use a spatula to press the meat down. It will have the consistence of patè but once you start cooking it in the pan you'll see how nice it makes like small balls.

First we do the aubergine, so while it's in the oven we can make the sauce.

For it we need:
one aubergine per person
olive oil

Preheat the oven 150ºC. Wash the aubergine and cut in lenghwise about half centimeter thick. Put them separately in the oven tray and paint with olive oil on each side. Bake for 15 minutes.

For the bolognese, gives 700 liters of sauce:
200g meat, may be turkey, beef, chicken, reindeer, the one you like the most
300g crushed tomatoes (without seeds)
1 medium onion
2 small garlic teeth
dry oregan and basilicum
salt and black peper

Chop the meat as I explained before, it can be blended with the onion and the garlic roughly chopped. Cook the meat in a pan, once golden add the tomato and season, cook for about 10-15 minutes.

Now just have to put all together. In a container or plate add one aubergine layer and then cover with bolognese sauce, repeat until you reach desired height or you ran out of ingredients... bon appetit!

bocados de coco, nueces y cacao / coconut, nuts and cacao bites

For a sweet-tooth Sunday! But sweet-tooth as in energetic, chocolaty and packed with fuel for the body. Takes only 15 minutos to make and they last in the fridge longer than it will take you to eat them.

For 5 bars or 275g of bites:
100g shreaded coconut
4 pited dates
2 spoons of raisins, I used green ones
1 teaspoon of honey
2 handful of nuts, I used pecan, hasselnut, almonds and cashews
1 spoon coconut oil
30g powder cacao
*mandatory a food processor to crush all together

First I crushed the nuts an put them in a pan to toast on medium/low fire while doing the rest. Add to the machine the coconut, dates and raising and blend for about 8 minutos in full power (for 800W power, so time varies according each processor), until you reach an homogeneous color mix. Finally add honey, cacao, coconut oil and the toasted nuts (you can also add them later if you prefer bigger pieces) and blend for other 3 minutes until ingredients are well integrated. Finally compact the mix: making balls or using a mold, I used a donut type. Refrigerate for one hour and they'll be ready to eat!

They are even better the next day =]

This potato dumplings are a must when I visit my mother in law. Very simple to make, the recipe is quite flexible with the veggies that can be used. Goes well whit this baked chicken.

There is no mistery with the chicken. Is just to roll some bacon in the chicken legs and bake for about half an hour at 175ºC.

Gnoccis have a very peculiar trick. You basically boil the amount of potato or desired veggie, remove the water, smash it well  and flatten the mix in the same pot where it was cooked: you remove a quarter of it and replace it for flour. This doesn't mean that you throw away this quarter, is just to help with the proportion of flour.

I used 750g potatoes, 200g spinach, 2/3 cups of gluten free flour, 1 egg and 1 teaspoon of salt. Once all is together you make balls and then you make a little hole in the middle with your pinkie. Cook in almost boiling water for about 8 minutes, when they start floating in the water.

Plate and enjoy!

portavelas de hielo / ice candleholder

¡Me encanta!

Loved it! There are some advantages of living in a cld place and for me ice and snow is something that still fascinates me. This is quick to do but have to wait a bit to get it frozen. You just need a balloon, water and cold. You can also add flowers, leaves or spices to the water so that it stays once frozen. Is a very nice effect with the candle inside.

Gotta pay attention to the freezing time, I left it all night out (it was about -1ºC), but sure in the freezer would be done after a couple of hours. Important is that is not completely frozen so that there is a hole to set the tealight.

And besides been thinking about preparing this for breakfast, because my neurons are not awake when i stand up so I prefer to warm something up or prepare something quick that does not require any mental effort. I must recognize that this cold is not allwing me to feel all the flavours, but there has been a tasting round at home and even the one who does not like coconut milk ended up eating a portion.

For 900ml or about two portions is needed:
9 dates, soaked in half cup of water for about 15 minutes
400ml of coconut milk, I used canned
skin of half lemon, or lime
1/4 cinnamon stick
0,2dl round rice (here in Norway risgrøt is the best)
0,2dl water
1/4 spoon of salt
15g of chocolate, at least 70% cacao. This is optional and is for only one third of the recipe

So we boil the water with the rice and the salt, then we lower the fire and we simmer for 10 minutos or until the water is gone. Meanwhile we blend the coconut milk with the soaked dates and its water, here you should get about 650ml of liquid which is added to the rice once it soaks the water. Add als the cinnamon and the skin of lemon. Cook for low fire for 30-35 minutes, mixing eventually to avoid the rice sticking to the pot.

I wanted to experiment adding chocolate, so I took two thirds of the rice out of the pot and added the chocolate to the third left in the pot, left the pot on the stove with the fire off for about a minute. The chocolate melted right away, and I mixed it well.

Is hard to choose which one is best, so I made a domino portion for me!

I am a fan of sushi, but also very picky with fish and seafood. So when I make them home I usually end up making them with smoked salmon and veggies available around. With this recipe we reduce tremendously the preparation time and we also make them healthier replacing rice for a veggie rich in sulfur. Finally this rolls have no added suggar, sushi rice has an added mix of rice wine, rice vinegar and sugar.

For this recipe is mandatory to have a blender or a food processor to break the cauliflower. And also a bamboo mat for rolling sushi.

Ingredients, for 12 big pieces:
1/2 head of cauliflower
1 teaspoon of jazmin tea
water
nori leaves

For the filling I like to use salmon (and even better the one i smoke), avocado, chives and if I'm inspired the sweet egg omelette (which is basically one very well beaten egg with half teaspoon of honey, done like a french omelette). But this is up to your taste!

So you 'mince' the cauliflower to the texture you like, I prefer to have five milimeters pieces. Boil water in a pot with the jazmin tea, put a pasta strainer on top with the cauliflower and cover it. Steam this for 7 minutes and voilà! Don't panic if you don't have jazmin tea, I use it to soften the taste of the cauliflower, it helps removing this characteristic smell of it.

Now is rolls making time. You can use the cauliflower warm or let it cool down, put it on top of the nori, add the filling and roll it tight. You may need to wet the last edge to make a sealed roll. Use a sharp and wet knife to cut them. Best of all is that you can make them the night before to take for lunch the next day and the keep all the flavour and texture. Enjoy!

mini arbol navidad / xmas tree

¡Felices fiestas!

I reckon, I rent! Therefore I am not a fan of storing stuff because I normally have to move every year, so my X-mas decorations tend to be pretty minimalistics, easy to make and easy to get rid off easily.

This year I haven done it very simple. Had a deep green ribbon, some circular golden stickers and a small wooden nutcracker. With this and some tape I made my X-mas year.

Happy holidays!

desintoxicarse / detox

--------------------------------------------------------------------------------------------

Perhaps I started the blog strongly, like everything I do, and I sort of made obvious some of the most important explanations. Like this one.

First of all I must say I am no doctor nor nutritionist, but I have learned to listen to my body and being able to guide myself to some food habits and lifestyle. And this is really the most important I would recommend you to do.

In the beginning I decided to do all that docs and nutritionists talk about: detox in and outside. This means removing all food that generally gives inflamation or allergies to most people for at least a month, make sure you drink 1,5 liters of water and quit everyday producs that contain toxic ingredients:
1.  Say goodbye to flours, eggs, dairy, sugar, soft drinks (also alcohol), nuts and legumes...
2. Also say goodbye to most beauty products which contains recognized toxics: deodorant, shampoo, toothpaste, perfume, soap, make up, creams, ...
It was really hard, a major change, I loved cheese, a cookie or cake, and could not imagine my life without deodorant. My mother was the most amazed, she still remembers all the years I was refusing to eat her food. But here I am, and I smell good!

Will start with the most important, food. In the beginning I started doing meals that had at least two ingredients I loved and one that not so much, like burguer without bread (I like) with beetroot (didn't liked) and avocado (which I love), because this was the only way to step into this change. And when I had a sweet tooth, a mango or a banana in the pan with orange juice. The first week was hard, specially when I had people close to me (aka. my boyfriend) eating everything I could not! But then it became interesting, doable and entertained. It was a game to discover and try food I was not into because of their smell, color, texture or mental prejudicies.

For the hidratation part, best is to measure it so I bought a 750ml container that I filled in the morning and after lunch, I had it close to me when I was at work. That way I had the 1,5L and all the plus of what I ate after at home.

Week after I had lost 2kg, my skin problems dissapeared, my belly was flat, I felt less tired and willing to do things, was sleeping better, didn't had bad breath when I woke up, was going to the toilet everyday (and this never like this!). This change was working, and this results really pushed me to continue.

I reduced the likes ratio (food I like VS food i dislike) to 4:1 or even 4:0, to make sure I was varying my veggies and proteins. I forced myself to eat fish at least 2 times per week, and liver pate once a week. I kept repeating to myself 'this is healthy, makes good to me and I will eat it'.

Two weeks after, I was hooked! Didn´t had to force myself 'cause my tastes changed completely: I didn't want the super sweet chocolate cake or the fatty burguer, I wanted my strawberry cake or my baked fish with veggies. All cravings were gone. At that point I realized how bad I treated my body for almost 28 years, that my rash, eczema, endometriosis, tiredness, was just a reflection of what I've been eating.

After a month, my hair grew a lot, my nails got stronger, I got my period like it has never been (with a healthly color, no odor), my skin got tanned (my green soups were making me be photosyntesis, really, because here in Norway we haven't seen the sun yet), I lost more weight and felt happy just for no reason.

So once the detox period was over (I did 2 months instead of 1) I incorporated eggs, and no problem. Then I tried with wholemeal bread, and I got gasses inmediately and a very fat belly, so out with bread and gluten. Nuts and legumes was no issue either. About the dairy, honestly I don't like it anymore, and few times I've tried it doesn't feels great.

Hope somebody is asking, what about work out? Well, I was so tired after the winter that I stopped going to the gym completely. Was not leaving home either. Once I changed my food intake, I felt better but was feeling tired, it was after 3 months that I started to do some exercise, just going for walks. As I said in the beginning, listen to your body, if you don't have the power to work out, don't do it. It will come. Give yourself some time, your body has to get rid of all the chemicals y heal itself.

Last but not least, everyday beauty products. I changed my shampoo for one without sulfates, my deodorant for a salt bar (til I made one that worked for me), replaced hair foam and creams for the skin for essential oils, toothpaste for one without sulfates/sweeteners and soap for eco or handcrafted type, without parabens. And home, when a cleaning product was over, I replaced it for an eco or homemade type.

Finally, this does not mean not eating pizza out or a cake sometimes, is about choosing most of the times to choose food that gives benefits t your body, it is where we live and a complex machine that in order to work properly needs the proper noishuring: vitamins, minerals, oils, aminacids, and so on. Think about it!

How delicious! Inspired in my roots, this yummy rice drink is easy to make and can be taken hot or cold. I choose to make the coconut milk because the one I find around doesn't feels too good for me and besides I find it too strong for my taste. This recipe gives 3 liters.

For the coconut milk:
1 cup dehidrated coconut, in flakes or shreaded
3 cups of water (you can use more if you like a softer taste)

For the rice drink
1 cup basmati rice, it has to be very aromatic
5 cups of water
1 cinnamon stick
12 pitted dates
powder cinnamon to taste, I used 1 teaspoon

Soak the cup of dehidrated coconut in two cups of warm water for at least 15 minutes, also soak the dates in warm water (enough to cover them) the longer time, the better. Meanwhile cook the cup of rice in the 5 cups of water, take to boil and add the cinnamon stick, then lower the fire to medium/low and cover. Cook for about 35 minutes mixing eventually with a wooden spoon to avoid it to stick. Once cooked the rice should be soft and it should soak a big part of the water.

Back to the milk, pour the mix in the blender with one more cup of water and mix for 1 minute. sieve the milk thru a colander with a cheesecloth, exqueezing until the last drop. With the leftover on the cheesecloth is possible to make coconut flour, just spread it over a baking tray and bake for 20 minutes for 125ºC, keep in an airtight container.

At last we blend the coconut milk, the dates and its juice, rice and the powder cinnamon. If you wish to have it more liquidish just add more water (or milk). I like to have it warm, can't get enough of it!

fajitas

A favourite around the house. Super easy to make, even if you choose to prepare the pancakes yourself. what demands most of the time is the marinade of the meat and making the flour rise, oh and getting ready all the stuff you want to add to your fajita.

For the meat, serves for 3 people:
400g meat, can be chicken, pork, or a mix of this. Marinate with the seasoning under for about 2 hours
1/2 onion
1/2 bell pepper
Seasoning (not hot):1,5 ts ground cumin + 0,5 ts powder garlic + 1 ts chopped dry chilli (guajillo and/or ancho) + 0,5 ts oregano + 1 ts ground pepper +  1 ts salt + 2 ts paprika + 1 ts powder chili

Gluten free pancakes, gives 5-6 units
1,5 cups of teff flour
1 cup of wayer
0,5 ts baking powder
0,5 ts dry yeast
1egg
1 ts salt
coconut oit for the pan

For the fajita:
Tomato in chunks, Sweet corn, Lettuce, Avocado, ...

Mix the dry yeast with half cup of warm water, once disolved add to the flour and rest of ingredients to get a liquid mix. Let it rise for about 2 hours, like the meat.

Make the pancakes on the pan, like if they were crepes, medium fire and with covered pan so steam helps to make them rise. Cook for about 2 minutes each side. While you cook the meat, save the pancakes in an aluminium envelope and preheat oven to 150ºC. When there are 3 minutes left for the meat, get the pancakes in the oven so they are warm when you are about to eat them.

Serve with what you like the most: tomato, corn, avocado, ... Closing them properly is the most difficult park, so try to add all the stuff in the center of the pancae, then lift part of the bottom to the center, then take one side to the center and roll to the other side. Good luck!

pancarta / banner

¡Feliz semana!

I wanted to make something simple and yet original for my mums B-day so i improvized this banner that is so in nowadays, with stuff I had available, creativity and again quite some improvization.

I used the set square to give the triangular shape, a thick black marker for the letters and some paint to give it life. In the end I decided to hang it in the frame of my window, so spacing between triangles and its sice was very important for my design.

Have a nice week!

¡Bomba verde!

bienvenido bebe / welcome baby boy

I took this picture because I knew at some point I would publish it. There is no ocasion where flowers are not appropriate, and if they are part of a handcrafted arrangement even more.

This was to welcome Alejandro, the little brother that my friends Corina and Yilmaz gave to Aga. I played a lot with the names, wanted to get a 4 leters word, with each of the letters of the family: Home, Love, Happy, ... none fitted. And then it hit me, AMOR which means LOVE in Spanish.

Last but not least an elegant and simple presentation, a paper bag with a plastic bag stapled inside to put the water for the flowers, roses, a heart and the clip. Super cute!

I have to recognize that nut milk from scratch is for passionate people, because it really takes it time. Is totally worthy! Its smell and taste, plus the fact you can pimp it as you like: with more almond taste, sweetened with dates or honey, with spices...

You will need:
Desired amound of almonds, soaked and sprouted. This means almonds have to be covered with water for at least one and a half day, changing water every half day
Water, to taste. I recommend you to start with a ratio of 2 cups water per 1 cup of almond, if you want it more diluted, you can add more water in the end of the making of
Extras for flavour: like dates, honey, cinammon, cardamom, vanilla, ...

What takes the longest is peeling the almonds. You should buy ecological if you don't want to leave your fingers doing this operation. If they are not eco, sumerge them for 8 seconds in very warm water and inmediatelly after to cold water. Discard the greenish or black parts of the almonds, if there are some brown marks this are ok. Almond skin is going to garbage, because it's toxines (and also it's bitterness).

Add the peeled almonds to a blender, with twice amount of water and blend for a minute. Pass this thru a colander with a cheese cloth and squeeze very well to get your milk. Try it and add more water if you like, or extras for flavouring. It last for about 5 days in the fridge, but if you make a lot of milk you can also freeze it (without the extras for flavouring) so that you can have available for another time.

PLEASE d not throw away the wonderful leftover grinded almonds, you can easily make almond flour with it! Check how here :)

For me the best about making almond milk is to use the leftover to make almond meal (or almond flour). Is so tasty and super easy to make.

You will only need the leftover of the almonds after making the milk :), an oven tray with paper and few minutes of work. Preheat the oven to 125ºC (with fan), menwhile just spread the almond in the tray, leaving if possible some space around it, and let it in the oven until is golden and dry. Baking time really depends on how much amount you did and how big is your tray/oven, so if the tray is not full and there is enough space around the almond, it can be like 20 minutes, but if the tray is super full (like my pictures) it can take about 1 hour. Open the oven and touch it, it should be dry and hard.

Finally, the consistence you get out of the oven is like crumbles. I totally advise you to make it fine, either by using a food processor or a colander with the mortar mallet or a spoon. I do this once the flour is out of the oven, let it cool down a little and save it to an hermetic container. It can easily last in a dark, cool place, for at least 3 months.

vegetales rellenos / stuffed veggies

Had some leftover in the fridge and decided to get over with them: some bolognese sauce, few of my veggie noodles with tomato sauce and cod, and some zucchini and half aubergine begging to be eaten. Easy to make, tasty and guilt free - for not wasting food.

For the veggie canoes, serves two portions:
2 zucchini
1/2 aubergine
This are the veggs I had, but if you have and you like bell pepper, this can also work.

Preheat oven to 175ºC. Cut the veggies longitudinally and empty the seeds out of them with a spoon (I used the ice cream spoon, works fantastic!) but you have to make sure that the veggs are looking like a canoe, if you make or leave any hole your filling will ran away that way, especially if it has some sauce. Stuff your canoes with the filling of your choise and bake fr 40 minutes in an oven tray with a lining paper.

On the meantime you can make this dip that goes very well with this recipe, reminds me to hummus but without the cumin:
1 cup of cashew nuts, best if they´ve been soaked in advance for 12 hours
juice of half a lemon (without seeds please)
1 tablespoon water
1 tablespoons of fresh or dried herbs of your choice, I used fresh rosemary and dill
1 teaspoon salt
optional 2 tablespoons nutricional yeast

Add all the ingredients to a container where you can use a stick blender, so that the container is just wide enough to fit the stick and a little of the mix on the sides, and blend until you get an homogeneus-thick paste. If you have a food processor, you can use instead, but a blender will not help in this situation.

Eat one by one and leave the rest in the warm oven, cause warm they are super!

I was shocked to realize it was so easy and quick to cold-smoke your own salmon. Inspiración from my dear Jamie Oliver, totally recommend to try this one out home.

Ingredients:
300g salmon, with skin, splitted in two equal parts, make sure it has no bones or flakes
3 heaped tablespoons of sea salt
1 heaped tablespoons of brown suggar
1/2 orange zest
1 lemon zest
1 shot of Cacique500 rum, or any other brown rum, vodka or gin
50g fresh dill
plastic film paper

Now we make the magic cold-smoking mix: salt, sugar, citric zests, alcohol and the dill stem chopped, all well mixed. You add one of the pieces of salmon on the film paper, skin facing the paper, and you add the magic mix in all the orange sides, leaving a thicker layer on the top part of the filet. Now you add the other salmon filet on top of this thick layer, leaving the skin up and making a kind of sandwich where the skins are up/down and the magic mix between the orange side. For the final trick wrap very well our salmon sandwich, making sure that the orange sides of the salmon are covered with our magic cold-smoking mix. Add a second layer of film around it and keep it in the fridge for at least 5 hours and max 9; the longer it is, the harder it will get, flavour will remain the same.

Once the time passed, get the salmon out of the plastic film and remove as much as you can of the magic mix with your fingers, no need to wash the salmon. You will notice that it has now a more intense orange color and it's kinda harder consistence. Cut very tiny the leaves of the dill and rub your orange sides of the salmon with it. Keep in the fridge for a week. When you want to eat it, just cut slices from the sides, slide the knife slightly outwards when you get close to the skin so that you have a skinless slice. You will enjoy it...

As I said, it is a very simple thing to do and it has a great taste. This was a great discovery for us and we will definitely include it in our weekly menus.

¡Buen provecho!

The longest part to make is the sauce, so if you have done it in advance the dish will take you like 10 minutes. The fish can be replaced by any other white flesh type, with a soft sea taste preferably.

For the sauce, gives like half a liter:
1 apple, preferably red, cut in chunks
2 slices of fresh ginger
1 garlic tooth roughly chopped
1 cinnamon stick or 1/2 teaspoon powder cinnamon
1/2 teaspoon coriander seeds
2 bay leaves
1 white onion roughly chopped
2 tablespoons apple vinegar
3 tablespoons tomato pure
1/2 cup of water
1 teaspoon coconut oil

Add the coconut oil to the pot, together with ginger and the apple. Once the onion is soft, add the rest of the ingredients to the mix. Increase the fire and make it boil and lower to medium/low and cook with the lid on for 15 or 20 minutes until the apple is soft. When ready, remove the bay leaves, ginger and cinnamon stick and blend the rest of the sauce, set aside.

For the fish, two portions:
350g Pollachius virens in fillet, without skin (saithe, the brother of  bacalao, 'sei' in Norwegian) or any other white flesh fish
half of the sauce done before
timian, if available
steamed veggies of your choice

Make sure there are no bones on the fish, or else it will be difficult to spot once you add the sauce. Warm a non-stick pan to high fire, while it's getting the temperature rub the sauce in one of the sides of the fish so that is well soaked. Put the fish on the pan, with the saucy-side facing the pan so that you can rub the other side of the fish while is cooking. Carefully rotate the fish after 3 minutes (depending on thickness, mine had about 1,5cm) lower the fire and cook the other side for 3 more minutes.

You can have the fish with what you have around, some steamed veggies (that you can set to steam right before starting with the fish) or a salad. An I added some timian when plating to give a little bit more aroma. This recipe goes nicely for those of you, who like me, are not so big fans of the fish. The sauce goes very well with this type of fish. Enjoy!

Mini coquitos

1 1/2 cda aceite de coco
3/4 cda miel del bosque (a gusto)
3/4 taza coco rallado
1/2 taza almendras germinadas molidas

Hace falta: yuca entera

¡Batir y disfrutar!
